Between five and eight the counter is three deep and the fryers are full. A ringing phone is an order you might take wrong and a queue you are not serving. An online order writes itself down, prints, and joins the queue in the right place.

Collection is the default rather than an afterthought. The customer orders, pays, and comes in when it is ready instead of standing in the queue waiting for it to be cooked. If you deliver as well, that runs alongside with its own area and minimum order.

A chippy menu is short and heavily optioned. Portion sizes, which fish, chips or without, sauces, sides, a childrens portion. Set the choices once and the customer builds it correctly before it reaches the counter.
